Trini-Style Chicken Liver Cutter
Ingredients
- 1 lb chicken liver or gizzard
- 2 or 1 1/2 tbsp Breezy Caribbean Chatt Masala
- 1/4 cup cup tap water
- 1/2 cup water for cooking
- 2 tbsp oil
- 1 1/2 tbsp Onion, garlic, hot peppers (optional)
- Salt to taste
Instructions
- Wash the chicken liver thoroughly and season generously with your Caribbean green seasoning mix. Allow it to marinate for about 30 minutes or overnight for deeper flavor infusion.
- Chop half an onion into small cubes. If desired, you can also prepare garlic and hot peppers to add extra flavor.
- Heat the oil in a pot over medium heat. Add the chopped onion, hot peppers, and garlic (if using) to the pot. Sauté until the onions become translucent.
- In a separate bowl, mix Chatt Masala with ¼ cup of tap water until well combined.
- Slowly pour the Chatt Masala mixture into the pot, stirring continuously to prevent clumping. Cook for about 4 minutes until the mixture transforms into a cohesive paste.
- Add the seasoned chicken liver to the pot and stir well to coat the liver with the masala mixture. Cook for approximately 2 minutes.
- Season with salt to taste and add additional green seasoning if desired for extra flavor.
- As the liver begins to stick to the pot (but not burn), pour in the remaining ½ cup of water to facilitate the cooking process.
- After about 15 minutes of cooking, check the doneness of the liver and adjust the liquid level according to your preference.
- Taste for seasoning, adding more salt if necessary.
