Wash the chicken liver thoroughly and season generously with your Caribbean green seasoning mix. Allow it to marinate for about 30 minutes or overnight for deeper flavor infusion.
Chop half an onion into small cubes. If desired, you can also prepare garlic and hot peppers to add extra flavor.
Heat the oil in a pot over medium heat. Add the chopped onion, hot peppers, and garlic (if using) to the pot. Sauté until the onions become translucent.
In a separate bowl, mix Chatt Masala with ¼ cup of tap water until well combined.
Slowly pour the Chatt Masala mixture into the pot, stirring continuously to prevent clumping. Cook for about 4 minutes until the mixture transforms into a cohesive paste.
Add the seasoned chicken liver to the pot and stir well to coat the liver with the masala mixture. Cook for approximately 2 minutes.
Season with salt to taste and add additional green seasoning if desired for extra flavor.
As the liver begins to stick to the pot (but not burn), pour in the remaining ½ cup of water to facilitate the cooking process.
After about 15 minutes of cooking, check the doneness of the liver and adjust the liquid level according to your preference.
Taste for seasoning, adding more salt if necessary.
Serve hot and enjoy the flavorful and breezy Caribbean Chatt Masala Chicken Liver Trini-style!
Feel free to adjust the spice levels and seasonings according to your taste preferences.
